HOW TO COOK PASTA PROPERLY

You might give it for granted, but most of the times people are not aware that if pasta is not cooked properly it can assume a glue texture. First step is to choose a suitable pot that can contain the amount of pasta you wish to cook.

Put some water that has to fill more than a half of the pot, you can put cold water or if you are in a hurry just make it boil in the kettle and pour it. Take the water to the boil and add salt, how much depends on your taste. However it’s better to add some, as even though the sauce is tasty, the flavour will not stick with the pasta itself.  At this stage, read the cooking time on the pasta package. I suggest De Cecco, Garofalo, Barilla for the Americans or super markets taste the difference as their other makes overcook too easily. Pour the pasta in, if long pasta, gently help the pasta to sink in the pot with your hands or with a fork.

If you worry it’s going to stick just pour a drop of oil in the water. At this point check on the pasta every so often and stir it not to make it stick. Your sauce will be ready, I suggest to make your sauce from scratch it’s easy, healthier and cheaper. You will find the recipe under the Grandma recipe section. Now, only two minutes before the cooking time is complete, get the colander and quickly drain the pasta. Save just a bit of cooking water in a glass or so. Leave the hob lit @ low gas. Quickly put the pasta in the pot and add the sauce and the cooking water and place it on the hob. Stir it for one or two minutes, turn the gas off.

DO NOT LEAVE THE POT ON THE HOB, EVEN IF IT’S OFF, IT’S STILL HOT AND IT’S GOING TO OVERCOOK YOUR PASTA!!!

At this stage you real Italian pasta is ready to be served! Sprinkle some parmesan cheese if needed, put a leaf of basil for a little decoration and you have made the real thing.

TRY FRITTATA DI PASTA, IT’S EASY HEALTHY AND TASTY

If you do not have any pasta left over, cook 500 gr of spaghetti or linguine. Once done leave it to cool off.

In a bowl put three eggs add a pinch of salt, one mozzarella ball finely chopped and parmesan cheese. Beat everything together. Once the pasta is cold, cut it and add the egg mixture. Pour it into a no sticking pan on the gas @ medium heat. Add two or three spoons of olive oil. You are now ready to make your pasta frittata. Try it, it’s delicious!
